Since then it has become an everyday word.<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">A Russian woman wondered why we threw out a lot of good food.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The only thing wrong with the carrots, the yoghurt, the flour and the grains was that they had passed their sell-by date. There was really nothing wrong with them.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Since then many chefs and kitchen people have both told and shown how we can make delicious food out of leftovers and avoid food waste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That has resulted in piles of new cookbooks and cookery programmes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Apps have been developed so that together we can rescue food from the bin.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Shops and restaurants sell the food they have not sold during the day at a bargain price.<br>You just have to go to the shop or the restaurant yourself and pick up your bag of food.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The supermarkets have made spaces and boxes with yellow price labels for food that is close to its sell-by date.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There is good economy in minimising food waste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So use your leftovers.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">They can become new and interesting dishes,<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">and hey presto &#8211; suddenly you have also saved a little on your household budget.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">All of it interesting, tempting and new<\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">\u2013 <strong>or is it really?<\/strong><\/h4>\n\n\n\n<h4 class=\"wp-block-heading\">Is it not just good, old-fashioned common sense, the kind Laura used in the Varn\u00e6s kitchen in Matador?<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Back then, good food was not to go to waste either.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Everything on the pig had in some way or other to become good food.<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">From a wise Russian woman to a wise Greenlandic woman.<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">In <a href=\"https:\/\/www.qeqertalik.gl\/?sc_lang=da\">Aasiaat, a town in Disko Bay<\/a>, Dorthe Kjeldsen has lived for 30 years together with her husband Jens. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The two of them have sailed through the Northwest Passage in their sailing boat &#8220;Killua&#8221;, out to the small islands of the Pacific. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It was the fourth time Jens and Dorthe put to sea, because they find it life-affirming to sail out and experience the world.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The reason they chose to take the trip through the Northwest Passage is that the journey is the stuff of legend.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The Inuit used that route more than 100 years ago, when they travelled from Canada to Greenland.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">On that trip Dorthe became the first Greenlandic woman to sail through the Northwest Passage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.sermitsiaq.ag\/kultur\/arets-kvinde-2020\/665323\">That is also why she was chosen as Woman of the Year in Greenland in 2020.<\/a> She was nominated for the prize because she is both tough and modest.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">She is a good role model for women, because she shows that you can do what you set your mind to.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Jens Kjeldsen\u2019s childhood friend, the film maker Erik Peitersen, joined the crew of the Kjeldsens\u2019 boat &#8220;Killua&#8221; in Aasiaat before they set off for the Northwest Passage. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The trip was planned to take about three months.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That meant they had to bring enough provisions so that they would not also have to worry about food if they got stuck in the ice along the way.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Wind, current and waves are also something sailors respect. They can make it impossible to reach harbour and take on supplies.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Greenlandic provisions<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ahead of the trip Dorthe had gathered a lot of Greenlandic provisions.  <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That is what Greenlandic food is called.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is good, solid Greenlandic food such as muskox and reindeer meat, seal and fish. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Food that people have eaten themselves happy and full on for generations.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Peitersen was given tastes of the provisions when he came on board Killua, as a welcome.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Among other things he was to taste mattak (whale skin). It is a lovely Greenlandic delicacy &#8211; and it tastes wonderful.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To Peitersen&#8217;s surprise, mattak is very clean in flavour, a little in the style of oysters and sushi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<div class=\"wp-block-media-text is-stacked-on-mobile\" style=\"grid-template-columns:19% auto\"><figure class=\"wp-block-media-text__media\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" width=\"768\" height=\"1024\" src=\"https:\/\/i0.wp.com\/sika-mut.dk\/wp-content\/uploads\/2018\/01\/Peitersen-e1517401822321-768x1024.jpg?resize=768%2C1024&#038;ssl=1\" alt=\"Peitersen f\u00e5r kogte s\u00e6ltarme til aftensmad - alt blive brugt p\u00e5 en s\u00e6l for at forhindre madspil\" class=\"wp-image-4139 size-full\" srcset=\"https:\/\/i0.wp.com\/sika-mut.dk\/wp-content\/uploads\/2018\/01\/Peitersen-e1517401822321.jpg?w=768&amp;ssl=1 768w, https:\/\/i0.wp.com\/sika-mut.dk\/wp-content\/uploads\/2018\/01\/Peitersen-e1517401822321.jpg?resize=225%2C300&amp;ssl=1 225w, https:\/\/i0.wp.com\/sika-mut.dk\/wp-content\/uploads\/2018\/01\/Peitersen-e1517401822321.jpg?resize=610%2C813&amp;ssl=1 610w\" sizes=\"auto, (max-width: 768px) 100vw, 768px\" \/><\/figure><div class=\"wp-block-media-text__content\">\n<h3 class=\"wp-block-heading\">Boiled seal intestines with mustard<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">One evening out at sea Dorthe served boiled seal intestines with mustard, which goes well with seal meat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Peitersen was set to plait the intestines.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">They look much more delicate and inviting when they are plaited. Otherwise it just looks like an ordinary boiled sausage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It was the first time Peitersen had tasted seal intestines.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To his surprise he liked the flavour. In taste it is a little reminiscent of sliced heart.<\/p>\n<\/div><\/div>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Full and content, Peitersen noted that it is good to see that EVERYTHING on a seal is used.<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">That is, meat, blubber and innards alike. It can all be eaten. No food waste here.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The claws become interesting jewellery and <a href=\"https:\/\/sika-mut.dk\/en\/shop\/\">the sealskin becomes beautiful clothes and lovely shoes.<\/a><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That is how it is, and that is how it has always been.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Everything on a seal is used.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">It is common sense. <\/h4>\n\n\n\n<h3 class=\"wp-block-heading\">That is how you avoid food waste <\/h3>\n\n\n\n<h4 class=\"wp-block-heading\">&#8211; and that is how it has been done for many generations in Greenland.<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.dr.dk\/drtv\/saeson\/peitersen-og-de-store-oceaner_238080\">If you want to watch (or rewatch) the Kjeldsens&#8217; and Peitersen&#8217;s voyage across the oceans, you can find all the programmes on dr.tv.<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Food waste &#8211; a new word that entered our language in 2014.
